1 cup water
14 oz chicken broth, low sodium
1 pound shrimp
12 oz Healthy Harvest thin spaghetti
1 tsp olive oil
1 large red bell pepper sliced
1 - 8 oz pack sliced mushrooms
2 tsp flour
1 tsp cajun spice mix, sodium free
1 can petite diced tomatoes, low sodium
2/3 cup evaporated skim milk (not condensed)
1/4 cup fresh chopped parsley

Put broth and water in large pot and bring to a boill.
Add pasta and cook for 8 min
Add shrimp and simmer for 3 min or until shrimp is cooked.
Do not drain.
In skilled, add olive oil.
Add peppers and mushrooms, saute for 4 min.
Add flour and cajun seasoning.
Heat for 30 seconds. Add tomatoes. Stir in milk and heat for 1 min.
Add sauce and parsley to pasta.
